Sicilians know their foods for sure. Caponata is one of their signature dishes, consisting of cooked aubergine, celery and other vegetables of your choice. With a finishing touch of some capers and sweetened vinegar. I’ve given it two tries thus far, the first one being ok and the second delizioso.
The complicated world that we live in needs dishes like this. Salsicce, green pepper, rosemary. Rigatoni, olive oil, parmesan. Made our dinner table drool for more.
If the ingredients in the fridge for a good meal are running low, you can usually still count on this classic. At least I can with my fridge’s content. And this classic never fails me.

No, I don’t really care whether it’s originally an age-old sicilian recipe passed on from generation to generation (as many stories have it) or if it’s just something that the american restaurant chain Olive Garden came up with and named to sound more authentic and ecstatic (as other stories have it). Either way it’s sinfully delicious – from the first thought to the last forkful.
