Caponata

Sicilians know their foods for sure. Caponata is one of their signature dishes, consisting of cooked aubergine, celery and other vegetables of your choice. With a finishing touch of some capers and sweetened vinegar. I’ve given it two tries thus far, the first one being ok and the second delizioso.

Thai Mango Salad

Inspired by the fantastic Mad Cook dinner, I decided to try this as an appetizer for a Thai cuisine dinner (which in turn was inspired by my three-year-old goddaughter’s favorite food, kudos to her too). If you’re looking for something to open up your senses, this is definitely worth trying out. Ginger, chili and coriander will work wonders on your palate!

Raw food dips

Being on this raw food detox thing gives me all kinds of fantastic new ideas in kitchen (whenever I have the time to do something else besides a salad). This time I wanted to spice up the basic salad / vegetable snack with some good-looking and superb-tasting dips / dressings. And man, I must admit, these truly make a huge difference – it’s amazing how you can make vegetables more delicious by adding more vegetables!

The one on the left is beetroot-avocado-olive oil-salt-pepper and the other one is avocado-spinach-eggplant-garlic-olive oil-salt-pepper. Simple as that.

I’m pretty sure you can’t go wrong with just a bit of imagination and a blender. Still, here’s something from Google to give you a hand.

Spinach Coconut Soup

It’s soup time of the year! This was something new I tried a while ago. Thanks to the spinach (of which there was a LOT), the texture and taste is a different than what you (I) usually have for soup. Maybe not my instant new fave, but a refreshing change anyhow!

(N.B. I also added some tofu to make it a bit more belly-filling.)
